Ingredients

  • 1cup blueberries
  • 2 1/2cups almond flour
  • 1/3cup melted coconut oil
  • 1/3cup nut milk
  • 2 eggs
  • 1/3cup maple syrup
  • 1 1/2tsp baking powder
  • 1tsp vanilla extract
  • zest of 1 lemon

Instructions

  1. Preheat oven to 350
  2. Add almond flour, melted coconut oil, eggs, baking powder, vanilla extract, almond milk, maple syrup, and lemon zest to a mixing bowl and combine well then fold in the blueberries
  3. Fill 12 muffin tins evenly with the mixture and bake at 350 for 25 minutes
