One pot pasta meals are hands down the easiest and tastiest weeknight meals. They are so easy to throw together after a long day at work. That’s why I love this Gluten Free One Pot Mexican Pasta!
How to make Gluten Free One Pot Mexican Pasta
You can’t get any easier than throwing everything in a pot and letting it cook. This recipe is meat free (you can add some if you like. See substitutions below) so all you have to do is add diced onions, bell peppers, frozen corn, a can of Rotel, some seasonings, and broth to a pot and that is it!
Once you add the diced onion, diced bell pepper, frozen corn, Rotel, seasonings, pasta, and broth to the pot you will bring the pasta to a boil and let cook for 12-15 minutes until the pasta is tender and you are left with a creamy sauce.
When the pasta is done, stir in the black beans.
I decided to make this one pot pasta recipe meat free, but you can add meat if you like. If you want to add ground beef or ground turkey to this one pot pasta all you have to do is brown the meat first, then add everything to the same pot and let it cook. You can also add shredded rotisserie chicken!
I love using Jovial Brown Rice Pasta for this recipe to keep it gluten free. If you have a favorite gluten free pasta you can use that. I have found if I use chickpea pasta (like Banza) then this doesn’t come out well. The chickpea pasta seems to always leave a funny tasting film behind that I need to rinse off before adding it to a sauce.
This Gluten Free One Pot Mexican Pasta is also dairy free! If you want to add some cheese on top then it will totally take this recipe to another level!
Another great topping for this pasta is avocado (insert drool emoji here lol).

Gluten Free One Pot Mexican Pasta
- 1 box Gluten Free Pasta
- 4 cups broth
- 1 can black beans
- 1 can Rotel (green chilies and diced tomatoes)
- 1/2 cup frozen corn
- 1/2 cup diced onion
- 1/2 of a green bell pepper diced
- 1/2 of a red bell pepper diced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp pepper
- 1/2 tsp salt
- Add everything except the black beans to a pot and bring to a boil
- Let pasta boil for 12-15 minutes then add in the can of black beans
- Optional: served topped with avocado or cheese or both
