BLT Chicken Salad

This healthy BLT chicken salad recipe uses simple ingredients like rotisserie chicken, cherry tomatoes, spinach, and crispy bacon to give you all the flavors of a classic BLT.

Ingredients
  

  • 1 whole rotisserie chicken
  • 4 slices bacon
  • 1 cup diced grape tomatoes
  • 1 cup roughly chopped baby spinach
  • ½ cup diced onion
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon pepper
  • ¼ teaspoon salt

EQUIPMENT NEEDED

  • Large mixing bowl
  • Cutting board
  • Knife

Instructions
 

  • Cook the bacon till crispy. I prefer to do mine on the stove but you can do it in the oven or however you like.
  • Debone and shred the rotisserie chicken and add it to a large mixing bowl.
  • Dice your tomatoes, onions, and spinach and add them to the mixing bowl with the chicken.
  • Add the mayo and seasonings to the bowl and mix everything together.
  • Crumble the crispy bacon into pieces and add it to the chicken salad mixture and stir to combine.
    -Serve cold

Notes

Substitutions
Chicken- I love using rotisserie chicken but you can use canned chicken or cooked chicken breasts if you like.
Mayo- If you don't mind dairy, you can substitute the mayo for plain Greek yogurt or you can do half mayo and half plain greek yogurt if you want the recipe to be lower in fat.
Onion- I use yellow onion but red onion or green onion would also be great.
Bacon- If you want you can substitute regular bacon for turkey bacon. I like to use sugar free bacon to keep this recipe Paleo and Whole30.
Spinach- I love using baby spinach but you can use kale or romaine instead.
Tomatoes- I use cherry tomatoes but you can use grape tomatoes, champagne tomatoes, Roma tomatoes, or even heirloom tomatoes.

Here are some ways to serve this chicken salad.
  • Sandwich- Adding this to some toasted gluten free bread would make for a great lunch
  • Lettuce wrap- Use bib lettuce to make this into lettuce wraps
  • Add avocado
  • Pasta- I love adding gluten free pasta for a fun twist
  • Stuffed avocado- scoop out a little bit of an avocado, add it to the chicken salad, then fill the avocado with the chicken BLT salad
  • Salad- Add the chicken salad to a bed of lettuce
Storing
Store any leftover chicken salad in an airtight container in the refrigerator for 3-5 days.
