To a large mixing bowl, add the ground bison, almond flour, eggs, tapioca flour, salt, pepper, onion powder, garlic powder, and Italian seasoning. Using your hands, combine everything together.
Using your hands, roll the meat mixture into 1.5 inch balls and evenly place them on the parchment lined baking sheet
Bake at 400 degrees Fahrenheit for 20 minutes or until they reach an internal temperature of 160 degrees
