Bacon and Chicken Brussel Sprouts Salad

A warm Brussel Sprouts Salad loaded with bacon, chicken, and topped with ranch

Ingredients
  

  • 4 Chicken Breasts
  • 1 12 oz Bag Shaved Brussel Sprouts
  • 4 Strips Bacon I like to use Applegate No Sugar bacon to keep this Whole30
  • 1 Medium Red Bell Pepper diced
  • ½ Onion diced
  • 1 teaspoon Garlic Powder Plus extra to season the chicken breasts
  • ½ teaspoon Onion Powder Plus extra to season the chicken breasts
  • 1 teaspoon Pepper Plus extra to season the chicken breasts
  • ½ teaspoon Salt Plus extra to season the chicken breasts
  • 1 teaspoon Ghee or cooking oil of your choice
  • ¼ Cup Whole30 Compliant Ranch My favorite is Tessemae's
  • Everything But the Bagel Seasoning

Instructions
 

  • Place the strips of bacon in a medium sized pan and cook till crisp. Crumble the bacon and then set aside (leave the bacon grease in the pan when the bacon is done cooking)
  • While the bacon is cooking, dice the red bell pepper and onion
  • Add the ghee, diced bell pepper, and onion to a large pan and sauté on medium heat
  • Using a spoon, spoon the bacon grease into the pan with the bell peppers and onions
  • Lightly season both sides of the chicken breast with garlic powder, onion powder, salt, and pepper
  • To the pan you cooked the bacon in, place the chicken in the pan and cook on medium heat for about 6 minutes each side or until cooked through
  • While the chicken is cooking, add the bag of shaved brussel sprouts, garlic powder, onion powder, salt, and pepper to the pan with the bell peppers and onion. Cook about 6 minutes or until the brussel sprouts have softened
  • Once the brussel sprouts have softened, turn the heat to low and add the ranch and crumbled the bacon. Mix well
  • When the chicken is done cooking, take the chicken breasts and place on a cutting board and cut each breast into slices
  • Add brussel sprout salad to individual bowls, top with chicken and sprinkle with Everything But the Bagel Seaoning
