Instructions

  • Heat the avocado oil in a large pan over medium heat.
  • Add the diced onion and diced bell pepper to the pan and cook for 4-5 minutes or until the onions are transparent and have softened.
  • Add the ground bison to the pan with the cooked onions and bell peppers and cook for 7-8 minutes or until the meat has browned.
  • Add the minced garlic and cook for 1-2 minutes.
  • Add the tomato paste to the pan, combine it with the bison mixture, and cook for 1-2 minutes.
  • In a small bowl, whisk together the coconut aminos, mustard, chili powder, smoked paprika, salt, pepper, and honey. Then add the sauce to the bison mixture and cook for 2-3 minutes.
  • Serve your sloppy Joe mixture in between your favorite buns and along with your favorite side. I like to toast my buns in the oven on broil for a few minutes to give them a nice texture and warmth.

Notes

Substitutions
Bison- If you don't have ground bison, you can use ground beef.
Buns- I like to use Canyon Bakehouse gluten-free buns or Dave's Killer Bread buns but any kind of bun will work.
Green bell pepper- You can use any color of bell pepper in this recipe.
Tomato paste- You can use tomato sauce in place of tomato paste.
Coconut aminos- If you don't have coconut aminos you can use regular soy sauce or gluten-free soy sauce.
Honey- You can use maple syrup, coconut sugar, or regular sugar.
Smoked paprika- Regular paprika will work great.
Avocado oil- You can use olive oil.
Storing and reheating
Store any leftover sloppy joe mixture in an airtight container in the fridge for up to 4 days.
You can reheat your leftovers in the microwave and add them to a fresh bun.
