Buffalo Ranch Potato Salad

This Buffalo Ranch Potato Salad is the ultimate summer side dish mashup, creamy, tangy, and just the right amount of spicy. Tender chunks of potato are tossed in a bold buffalo ranch dressing made with real ingredients, then topped with all your favorite fixings. It's the dish everyone at the cookout will be asking about, and the best part? It comes together in under 30 minutes with no fancy equipment needed. Serve it cold, make it ahead, and watch it disappear.

EQUIPMENT NEEDED

  • Large pot

Ingredients
  

  • 1 pound yukon gold potatoes
  • ¼ cup ranch
  • ¼ cup buffalo sauce/ hot sauce *I use Frank's Original Hot Sauce
  • ½ cup diced celery
  • ½ cup red onion
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Fill a large pot with water and bring to a boil on high heat. Wash and cut the potatoes into 1 inch cubes, then add them to the pot of boiling water and boil for 10-15 minutes, until they are fork tender.
  • While the potatoes boil, dice the celery and onions.
  • Once the potatoes are soft and fork tender, strain them in a colander and add them to a large mixing bowl.
  • To the mixing bowl, add the ranch, buffalo sauce/hot sauce, garlic powder, dill, salt, and pepper, then mix to combine everything. Let it cool in the fridge for at least 30 minutes before serving.
