Coconut Date Balls

These easy coconut date balls are made with just a few simple, real ingredient staples and come together in minutes. Naturally sweetened with Medjool dates, they’re the perfect snack to keep in the fridge for quick energy or a wholesome sweet bite.

EQUIPMENT NEEDED

  • food processor or blender

Ingredients
  

  • 2 cups pitted dates
  • 1 cup unsweetened shredded coconut
  • 1 cup cashews
  • ¼ cup almonds
  • 2 teaspoons coconut oil melted

Instructions
 

  • Add all the ingredients to a food processor and blend on high for about 5 minutes or until it starts to combine and stick together.
  • Roll into 1 inch balls and store in an airtight container in the fridge.

Notes

Can I make coconut date balls without a food processor?
You can, but it takes a little extra effort. A high powered blender works well, or you can finely chop the dates and nuts by hand. Just make sure the mixture is sticky enough to roll into balls.
