Lemon Coconut Balls

These Lemon Coconut Balls are bright, chewy, and bursting with real lemon flavor in every bite. Made with a simple cashew, date, and coconut base and naturally sweetened, they're the perfect no-bake treat for when you want something refreshing without turning on the oven. Roll them up in just minutes, pop them in the fridge, and you've got a grab-and-go snack that tastes like sunshine. Great for meal prep, lunchboxes, or that mid-afternoon craving.

EQUIPMENT NEEDED

  • High powered food proccesor or blender

Ingredients
  

  • 12 pitted dates (about ½ cup)
  • 1 ½ cups cashews
  • 1 cup shredded coconut (unsweetened)
  • 2 tablespoons lemon juice
  • 1 teaspoon coconut oil
  • ½ teaspoon vanilla extract
  • lemon zest (from one lemon)

Instructions
 

  • Microwave the pitted dates for 30 seconds.
  • Add all the ingredients to a high power food processor or high power blender and blend until the mixture starts to clump together and can be pressed together and stay, about 5 minutes.
  • Using your hands, roll the mixture into 1 inch balls.
  • Optional: On a flat plate, add some extra shredded coconut and roll each ball in the coconut. The coconut won't stick a lot, but it adds some extra flavor.
