Add all the ingredients to a high power food processor or high power blender and blend until the mixture starts to clump together and can be pressed together and stay, about 5 minutes.
Using your hands, roll the mixture into 1 inch balls.
Optional: On a flat plate, add some extra shredded coconut and roll each ball in the coconut. The coconut won't stick a lot, but it adds some extra flavor.
