BBQ Salmon Bites

These baked BBQ salmon bites are incredibly easy and only require two ingredients. They are perfect for a quick dinner or an appetizer for a fun get together with family and friends.

EQUIPMENT NEEDED

  • Cooling rack

Ingredients
  

  • 1.5 pounds salmon
  • 1 cup BBQ sauce

Instructions
 

  • Cut your salmon into 1 inch pieces and place them in a large mixing bowl.
  • Pour the BBQ sauce into the mixing bowl and coat all the salmon pieces. Optional- Sprinkle a little salt and pepper before adding the BBQ sauce.
  • Line a baking sheet with foil and lay a cooling rack on top of the foil lined baking sheet.
  • Spray the cooling rack with cooking spray and place the salmon bites evenly on the rack.
  • Bake at 400 degrees for 10 minutes. Use the leftover sauce from the bowl and brush it on the salmon. Place the baking sheet back in the oven under the broiler and broil on high for 5 minutes.

Notes

Substitutions
BBQ sauce- You can use whatever kind of BBQ sauce you have on hand. I love using The New Primal's original BBQ sauce or their mustard BBQ sauce.
Tips
Have your fishmonger remove the skin for you when you purchase the salmon at your local grocery store. It saves so much time and hassle.
Storing and reheating
Store your leftover salmon in an airtight container in the refrigerator for up to 4 days.
Reheat your salmon in the microwave until warm or in the oven at 350 degrees for 8 minutes.
