Strawberry and Cucumber Salad with Honey Lime Dressing

This easy strawberry and cucumber salad with honey lime dressing is light, refreshing, and ready in 10 minutes. The perfect sweet and tangy summer side!

Ingredients
  

  • 1.5 pounds strawberries diced
  • 1 cucumber diced
  • ½ small red onion diced
  • 2 oz goat cheese

For the dressing

  • 2 tablespoons avocado oil
  • 1 lime juiced
  • 2 teaspoons honey
  • ½ teaspoon Dijon
  • pinch of salt
  • pinch of pepper

Instructions
 

  • Dice the strawberries, cucumber, and onion.
  • Add them to a medium-large bowl, then crumble the goat cheese into the bowl.
  • Whisk together the dressing ingredients in a small bowl.
  • Add the dressing to the strawberry cucumber mixture and mix till everything is combined.

Storing
Okay, so full transparency, this salad really is best fresh. It doesn’t hold up well after sitting in the fridge. But if you’re trying to prep ahead or save leftovers, here’s the game plan:
If it’s not dressed yet:
Keep the strawberries, cucumbers, onion, and cheese in separate airtight containers. That’ll give you about 1–2 days in the fridge till you need to mix everything together.
If it’s already dressed:
You’ve got about 24 hours before the cucumbers and strawberries start releasing too much water. It will still be edible, just not peak crispness. If the salad’s looking a little sad the next day, toss in a handful of fresh greens and a splash of lime juice.
