This is one of those salads that looks like you went all out, but really? It takes like 10 minutes. It's my go to when I want something fresh without doing a whole production. Juicy strawberries, crunchy cucumbers, and that sweet honey lime dressing work together so well! I love serving it up at cookouts, casual dinners, or when I just want a little fridge snack.
It also pairs perfectly with easy main dishes like my BBQ bison meatballs or this pesto crusted salmon for a full weeknight meal.

Substitutions
Goat cheese- I know goat cheese isn't for everyone, so you can sub it with feta or fresh mozzarella.
Dressing- This dressing is easy to throw together, but you can always use your go to bottled dressing. A poppy seed or balsamic dressing would go great with this recipe.
Can I make it Whole30 or Paleo?
Yes! I actually did my first Whole30 back in 2017 (changed the way I look at ingredients forever), so trust me when I say this salad can totally fit. Just omit the cheese and the honey in the dressing. You can add a date to the dressing and blend it together in a high power blender to still get that sweetness. If you don't want to add a date to the dressing, then I would add a little more Dijon to give the dressing more depth of flavor.
Want to make it more of a meal?
Easy peasy! Add some grilled chicken or shrimp, maybe even a piece of air fryer salmon (you know I love my air fryer). You can also toss in a big handful of greens to bulk it up. Or just pile it on top of some quinoa for a heartier vibe. Quick, easy, and still feels like something special.
Kaleena's Tip
For a little less bitter bite, peel the skin off the cucumber before dicing. I prefer to peel the skin off, but you can leave it on if you'd like!
Storing
Okay, so full transparency, this salad really is best fresh. It doesn't hold up well after sitting in the fridge. But if you're trying to prep ahead or save leftovers, here's the game plan:
If it's not dressed yet:
Keep the strawberries, cucumbers, onion, and cheese in separate airtight containers. That'll give you about 1-2 days in the fridge till you need to mix everything together.
If it's already dressed:
You've got about 24 hours before the cucumbers and strawberries start releasing too much water. It will still be edible, just not peak crispness. If the salad's looking a little sad the next day, toss in a handful of fresh greens and a splash of lime juice.
