- Step 1: Microwave the pitted dates for 30 seconds, then add all the ingredients to a high power food processor or high power blender.

- Step 2: Blend until the mixture can be pressed together and stay. Using your hands, roll the mixture into 1 inch balls. Optional: On a flat plate, add some extra shredded coconut and roll each ball in the coconut until fully coated.

- Be sure to blend the mixture until you can take some of it and press it together, and it stays. It should be a sticky consistency. If it's not pressing together and staying, blend the mixture for longer.
- Rolling the balls in coconut is optional. You can skip this step to save some time.
- Don't skip the lemon zest! It's what helps give these energy bites that great lemon flavor.

- 12 pitted dates (about ½ cup)
- 1 ½ cups cashews
- 1 cup shredded coconut (unsweetened)
- 2 tablespoons lemon juice
- 1 teaspoon coconut oil
- ½ teaspoon vanilla extract
- lemon zest (from one lemon)
Instructions
- Microwave the pitted dates for 30 seconds.
- Add all the ingredients to a high power food processor or high power blender and blend until the mixture starts to clump together and can be pressed together and stay, about 5 minutes.
- Using your hands, roll the mixture into 1 inch balls.
- Optional: On a flat plate, add some extra shredded coconut and roll each ball in the coconut. The coconut won't stick a lot, but it adds some extra flavor.
