Not only are these coconut date bites naturally sweet and full of good fats, but they also happen to be vegan, gluten free, and paleo friendly. I love having something like this around for a quick midday snack, especially on those busier days when I just need a little something to keep me going. Having a batch of these in the fridge right next to my flaxseed pudding, honestly, is a lifesaver.
A lot of store bought energy bites are loaded with added sugars, which I try and stay away from after doing Whole30. These date balls get their sweetness naturally, which makes them the perfect balance of snack and sweet treat in one little bite.

Can I make coconut date balls without a food processor?
You can, but it takes a little extra effort. A high powered blender works well, or you can finely chop the dates and nuts by hand. Just make sure the mixture is sticky enough to roll into balls.

- Add the pitted dates, unsweetened shredded coconut, cashews, almonds, and melted coconut oil to a food processor.
- Blend on high for about 5 minutes until everything starts to form together.
- Roll the date mixture into bite-sized balls and refridgertate for at least 30 minutes.
Add-ins
Here are some fun ways you can change up these date balls.
- You can add vanilla protein powder to get in some extra protein.
- Adding maple syrup or honey will give these bites a sweeter flavor which is perfect if you have a sweet tooth.
- To up the fiber content in these, you can add some ground flaxseed.
- Adding chia seeds is another way to add protein to these.
- Adding a chocolate drizzle to these will be great if you have a sweet craving.
- To add a little more vanilla flavor, you can add vanilla extract. Almond extract would also taste amazing in these. I love anything with almond extract!
Storing
Store in an airtight container in the fridge for up to 6 days. You can also freeze these and grab one or two anytime you need an easy on the go snack.

Coconut Date Balls
EQUIPMENT NEEDED
- food processor or blender
Ingredients
- 2 cups pitted dates
- 1 cup unsweetened shredded coconut
- 1 cup cashews
- ยผ cup almonds
- 2 teaspoons coconut oil melted
Instructions
- Add all the ingredients to a food processor and blend on high for about 5 minutes or until it starts to combine and stick together.
- Roll into 1 inch balls and store in an airtight container in the fridge.
