These easy ground bison tacos use simple ingredients and lean ground bison to make delicious tacos that are perfect for taco Tuesday dinner.
We are huge ground bison fans in this house! I tend to use bison a lot more than ground beef when cooking, and this taco recipe is so flavorful and an easy dinner the whole family will love.
I discovered ground bison a few years ago and have never looked back. I started cooking with bison when we did our first round of Whole30 and started cleaning up the ingredients I cooked with. It is a great 1-1 swap for ground beef and a lot leaner too. If this is your first time cooking with ground bison meat, you're in for a treat! It is so flavorful and cooks just as easy as ground beef. I find myself making these tacos for a quick meat or if I have a little more time I love making this bison shepherd's pie.

Ingredients
Substitutions
Ground bison- You can find ground bison in most grocery stores and Costco now. If you don't have ground bison then you can use lean ground beef, ground turkey, ground pork, or even ground chicken.
Tortillas- I like to use Siete cassava flour tortillas but you can use flour tortillas, corn tortillas, almond flour tortillas, or even a crispy taco shell.
Beef broth- You can use water instead but beef broth or bone broth adds extra flavor to the meat.
Tomato paste- If you don't have tomato paste then you can use tomato sauce.
White onion- You can use red onion or green onion.
Avocado oil- You can use olive oil instead.
Step by step
- Heat avocado oil in a large skillet or large cast iron pan to medium heat.
- Add your ground bison and cook for 8 minutes or until browned and has an internal temperature of 160 degrees Fahrenheit.
- To the pan with the meat, add the tomato paste and combine with the meat, and cook for 2 minutes. You don't need to drain the excess fat.
- Add the beef broth to the meat and cook for 1 minute.
- Then add your taco seasoning and cook for 2-3 minutes.
- Warm your tortillas, then spoon the taco filling into the warm tortillas and serve with fresh cilantro, diced onions, and your favorite hot sauce.

- Ground bison comes from an American bison while ground beef comes from a cattle cow.
- Bison isn't as widely available as ground beef and is usually more expensive. This is because there is a smaller population of bison and they have more specialized methods required for raising them.
- Bison is leaner with less fat than ground beef
What does bison taste like?
The flavor of bison is often described as robust, with a hint of sweetness and a richer taste compared to beef, it also has a tender texture. The taste of bison can vary slightly depending on factors such as the animal's diet, age, and how it's prepared.
Does bison cook like ground beef?
Bison can be cooked using similar methods as ground beef. It can be browned in a skillet, grilled, baked, or used in recipes that call for ground meat.
Tips
- Did you know it's super easy to make your own homemade taco seasoning? It's quick and uses seasonings that are pantry staples in your spice cabinet. I love making a batch of taco seasoning and keeping it in my spice cabinet for easy use.
- I like to buy tomato paste that comes in a tube. You can usually find it in your local grocery store. That way you can store it in the refrigerator and only use what you need instead of buying a whole can and only using a tiny amount.
Variations/ways to serve
There are so many different ways you can serve these bison tacos. Here are some of my favorite toppings and ways to serve them:
- Top with fresh cilantro and diced onions.
- Top with shredded lettuce, diced tomatoes, and a dollop of sour cream.
- Make taco bowls with rice and lots of fresh toppings.
- Make a taco salad.
- Add black beans or refried black or pinto beans.
- Add sauteed bell peppers.
Storing and reheating
Store your leftover taco meat in an airtight container in the refrigerator for up to 4-5 days.
You can reheat your taco meat in the microwave or you can reheat it on the stove. To reheat it on the stove, add your meat to a skillet, add a little water or beef broth, and heat on medium heat until warm.
