If you've been bored out of your mind with plain roasted veggies, this one's gonna wake you up. These hot honey roasted carrots and cauliflower are kinda magic. Sweet, spicy, a little sticky, and seriously irresistible. They get caramelized and roasty in all the best ways, and they're basically the superhero of side dishes if you ask me.
I'm a sucker for anything that gives me a kick, and I'll be real, hot honey is right up there with buffalo sauce in my personal hall of fame. I did my first Whole30 back in 2017, and ever since then I've tried to keep things simple and clean, but still fun. Honestly, these veggies check every box for me. They're cozy enough for a family dinner but also feel perfect as a weekend snack. If you're the appetizer-for-game-day type like me, trust me, you're gonna want these in your back pocket.
Toss them together with hot honey, some seasoning, and boom, you've got a sheet pan of sweet, fiery veggies that go with just about anything. Serve them next to teriyaki chicken thighs if you're feeling bold, or pair with a fresh broccoli and edamame salad. They'd be awesome with my blood orange glazed salmon, too! Gluten free, real food, no drama. Totally my vibe!
Can I use frozen carrots or cauliflower?
Yeah, you totally can, but heads up, they hold a lot of water. That usually means less crispy, kinda meh results. If frozen is what you've got, pat them super dry first, crank up the heat a bit, and keep in mind they won't roast as beautifully as fresh.
Can I use regular honey?
For sure! If you're not into heat, or you've got picky kids around, regular honey is just fine.
Can I use the air fryer?
Oh, heck yes! I live for my air fryer, you know? Quick, no fuss, no drama. Roast them at 375 for about 14 to 18 minutes. Toss the veggies with the oil and seasonings first, throw them in, and then brush on the honey during the last 5 minutes. Don't forget to shake that basket halfway through. You'll get sweet, sticky veggies that are perfect for munching on game day or, honestly, just straight from the basket, no shame.
Tips
- Soggy? Probably overcrowded. Spread those carrots and cauliflower out so they can breathe and get roasty.
- Uneven cooking? Happens. Try to chop them about the same size. If your carrots are super thick, you can start them in the oven for 10 minutes before adding the cauliflower.
Storing and reheating
Storing:
Pop any leftovers in a sealed container in the fridge and they will last for up to 4 days.
Reheating:
When you're ready to reheat, warm them in the oven at 375 degrees for 8 to 12 minutes, or in the air fryer at 350 degrees for 4 to 6 minutes. I'd splash on a little olive or avocado oil first, just to freshen them up.

Hot Honey Roasted Carrots and Cauliflower
EQUIPMENT NEEDED
- sheet pan
Ingredients
- 4 large carrots
- 16oz cauliflower florets *I used two bags of precut but you can use 1 small head
- 2 tablespoons hot honey
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- ½ teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Cut the carrots into long matchsticks or ½ inch slices and roughly chop any large pieces of cauliflower. Add them to the baking sheet.
- Drizzle the oil, sprinkle the seasonings, and drizzle the honey over the top. Using your hands or a spatula, mix everything together.
- Cook for 30 minutes or until everything is golden brown and the carrots have softened.
