I'll let you in on a little secret about me, I'm obsessed with anything covered in buffalo sauce. I swear I make crispy buffalo chicken once a week. So naturally, I had to stuff jalapeños with it too.
When it comes to the Super Bowl, or really any game day or party, these are always my go-to. They're always a hit!
Shredded chicken tossed in Frank's hot sauce, stuffed into jalapeños, and wrapped in bacon until it's crispy on every side. That's it. Simple ingredients, huge flavor, and they disappear the second they hit the table.

- Pre heat the oven to 450 degrees Fahrenheit
- Line a cookie sheet with foil, then place a cooling rack on top. This helps the bacon get crispy on all sides instead of sitting in grease.
- Cut the chicken into 1-inch chunks and season generously with salt and pepper.
- Heat avocado oil in a sauté pan over medium heat. Add the chicken to the pan and cook for 5-6 minutes, stirring occasionally, until it's fully cooked through with no pink remaining.
- Transfer the cooked chicken to a food processor (or use a hand mixer) and pulse a few times until it's shredded into small pieces.
- In a large mixing bowl, combine the shredded chicken with the mayo, hot sauce, and all the seasonings. Stir until everything is evenly coated.
- Slice the jalapenos in half lengthwise, then use a small spoon to scrape out the seeds and veins. This gives you 16 jalapeno halves total.
- Cut each strip of bacon in half, so you end up with 16 shorter strips.
- Scoop the buffalo chicken mixture into each jalapeno half, filling them evenly.
- Wrap a piece of bacon around each stuffed jalapeno, then place them on the cooling rack, seam-side down.
- Bake at 450 degrees Fahrenheit for 25-30 minutes, until the bacon is crispy and cooked through.
Kaleena's Tips
- You can use toothpicks to keep the bacon in place if you would like.
- If you don't have a food processor, you can use a blender or even a hand held mixer to shred the chicken.
- Lining a cookie sheet with foil and putting a cooling rack on top helps to get the bacon crispy on all sides of the jalapeno.
Storing and reheating
Storing: Store any leftovers in an airtight container in the fridge for up to 4 days.
Reheating: For the best texture and to get that bacon crispy again, reheat in the oven or air fryer at 400 degrees Fahrenheit for 5-8 minutes, or until warmed through. I don't recommend the microwave since it will make the bacon soggy.
Make ahead: You can assemble the poppers up to 24 hours in advance and store them unbaked in the refrigerator. When you're ready, just pop them straight in the oven, you may need to add a few extra minutes to the bake time since they'll be starting cold.
