These air fryer panko shrimp are everything you want in a crispy shrimp recipe! They are golden brown, have the perfect crunch, and are cooked without deep frying. And probably one of my favorite parts about this crispy air fryer shrimp is the creamy sriracha dipping sauce. The sauce is the perfect balance between creamy and spicy. I could eat it with a spoon!

What makes this panko shrimp recipe stand apart from the others is the light tapicoa coating before the egg wash, which gives the shrimp the perfect crispy golden texture when cooked in the air fryer. Also, the creamy sriracha sauce adds the perfect amount of heat to balance everything out.

Do you need to spray shrimp before air frying?
No, you don't have to spray the shrimp before air frying, but I like to. Spraying a light coat of olive or avocado oil on top of the shrimp before cooking helps give them that perfect golden crunch crust.
How do I keep the shrimp crispy?
Make sure not to overcrowd the shrimp in your air fryer basket. Overcrowding the shrimp will cause them to be soggy and not get crispy. Also, spraying the shrimp with a little avocado or olive oil before cooking helps get that crispy texture.
Substitutions
Panko- I use gluten free panko but any kind of panko works. I love Jeff Nathan's gluten free panko because I think it has the best texture.
Tapioca flour- You can use arrowroot flour, cornstarch, gluten free flour, or regular flour.
Coconut aminos- You can use gluten free soy sauce, regular soy sauce, or tamari.
Rice vinegar- White vinegar or apple cider vinegar will work.
Step by step

- Pat the shrimp dry, then add them to a medium bowl. Sprinkle in the tapioca flour and toss until all the shrimp are lightly coated.
- In a small bowl, whisk your eggs. Pour the eggs over the shrimp and gently toss until each piece is fully coated.
- In a shallow bowl or plate, mix the panko, garlic powder, onion powder, salt, and pepper. One at a time, press each shrimp into the panko mixture, coating both sides well.
- Place the breaded shrimp in your air fryer basket in a single layer. Make sure they aren't overlapping so they cook evenly. Lightly spray the tops with avocado oil or olive oil.
- Cook at 400ยฐF for 10 minutes. Flip the shrimp, spray again lightly with oil, and cook for another 4 minutes or until golden and crispy.
- While the shrimp cook, whisk together your sauce ingredients in a small bowl until smooth and creamy. Serve alongside the crispy shrimp for dipping.

Storing: Store any leftovers in an airtight container in the fridge for up to 4 days.
Reheating: The best way to reheat your leftovers is in the air fryer so they stay crispy. Air fryer leftover shrimp at 400 degrees for 5 minutes or until warm. I would not recommend microwaving. Microwaving will cause the shrimp to become rubbery, and the panko crust will be soggy.
